Dungeoneering would be best then. Smithing should be over with within a week or a little longer, and it doesn't seem this will be ready by then.

Maybe the problem is that there are too many [skill] options to choose from.  If you narrow down what skills there are to choose from, perhaps it would be easier to organise/get members to actually join in it. 

Maybe there are too many options, I don't know, just throwing stuff out there...
